Slow Cooker Recipe: Beef Roast with Veggies

It’s time to start up this fun winter series again! This week’s slow cooker recipe is Beef Roast with Veggies from Dana at The Coupon Challenge and is a staple recipe in many homes. Since Dana’s husband and children love beef pot roast, this is a family favorite!

Ingredients

  • 3-4lb Beef Roast
  • 1/2 cup water (you could also use about 1/2 can or so beef stock)
  • 3-6 potatoes depending on size, chopped in large pieces
  • 1 medium onion, chopped (size depending on preference)
  • 1 bag baby carrots
  • 3 stalks celery, chopped
  • 1 container fresh mushrooms, halved
  • 5-6 cloves of whole garlic, peeled
  • Handful of frozen pepper slices (if desired and have on hand)
  • Salt and Pepper
  • Thyme (if desired)

Directions

  1. Place thawed roast in skillet and generously salt and pepper. Brown on all sizes.
  2. Wash and chop all vegetables.*
  3. Place potatoes in bottom of crockpot then place roast on top of the potatoes.
  4. Cut slits in the roast and insert whole garlic cloves.
  5. Add remaining vegetables to crockpot around roast and sprinkle a little thyme if desired.
  6. Pour water (or stock) over roast and cover.
  7. Cook on low 6-8 hours or high 4 hours.

*If you cut potatoes or carrots too small, they will turn to mush.

Don’t lift the lid of the crockpot during cooking or you will add about 30 minutes to your cooking time!

Heart Shaped Turkey Meatloaf Recipe

  • 1 1/2 lbs lean ground turkey
  • 2 egg whites
  • 1/3 cup ketchup (plus what you add on top)
  • 1 Tablespoon Worcestershire sauce
  • 1 teaspoon dried basil and black pepper
  • 3 small red potatoes finely shredded
  • 1/2 cup red, green, or yellow peppers, chopped (I use the frozen pepper mix)
  • 1/2 cup bread crumbs (optional, I use them to help solidify the loaf)

Directions:

  1. Combine all ingredients and cook in crock pot low 6-8 hours.
  2. Top with ketchup.

Slow Cooker Recipe: Buffalo Chicken Meatballs

It’s time to start up this fun winter series again! This week’s slow cooker recipe is Buffalo Chicken Meatballs from Brett at Mama Loves Her Bargains and is perfect for the Super Bowl coming up on February 3rd.

Buffalo Chicken Meatballs

Ingredients

  • 1-lb ground chicken
  • 1 carrot
  • 1 stalk celery
  • 1/2 c breadcrumbs
  • 1/3 c crumbled bleu cheese
  • 12-oz Frank’s Buffalo Sauce

Directions

  1. Mix all ingredients except for hot sauce (we chop the carrots and celery in food processor but you can mince by hand).
  2. Spray inside crockpot with cooking spray. Brown meatballs on stove (don’t cook all the way through- we have a crock pot with a removable insert and just used that to brown the meatballs).
  3. Replace crock pot liner into crock pot, cover meatballs with hot sauce. Cook on low for 7 hours.

Makes about 16 meatballs (serves 4). Serve with ranch or blue cheese dressing. Can be served on a grinder roll or over egg noodles.

Slow Cooker Recipe: Chicken, Pineapple, & Black Bean Tacos

It’s time to start up this fun series again! This week’s slow cooker recipe is Chicken, Pineapple, & Black Bean Tacos from Sharon at Mom on Dealz that is an easy-to-prepare dinner for a busy weeknight.

Chicken, Pineapple, & Black Bean Tacos

  • 1 pound chicken breast
  • 1 can black beans drained
  • 1 can corn, drained
  • 1 can cubed or crushed pineapple
  • 1 small container of salsa
  • Desired taco toppings

Directions

  1. Pour 1/2 of the salsa in the slow cooker.
  2. Lay uncooked chicken breasts on top of the salsa.
  3. Dump the corn, beans, and pineapple on top of the chicken.
  4. Pour the remaining salsa on top of the mixture.
  5. Cook on low for 6-8 hours or on high 3-4.

You can serve in your favorite taco shell (hard or soft) and use your desired toppings. This also works well on top of rice.

Slow Cooker Recipe: Crock-Pot Chili

It’s time to start this fun series up again! This week’s slow cooker recipe is from Brett at Mama Loves Her Bargains that is sure to warm you on a cold night. Chili is one of Brett’s favorite dishes to make when the weather gets cooler. This is more or less the chili her mom made although some things have changed a bit over the years.

Crock Pot Chili

  • 1 lb ground beef (or turkey)
  • 1lb sweet Italian sausage (if you like more heat, use hot!)
  • 1 15oz can dark red kidney beans, rinsed
  • 1 15 oz can red kidney beans, rinsed
  • 1 15 oz can black beans, rinsed
  • 2 large cans Tomato Sauce
  • 1 small can tomato paste
  • Chili seasoning to taste
  • Hot peppers- to taste
  • 3 bell peppers and 1 medium red onion, sauteed to soften

Directions

  1. Brown the ground meat and the sausage in a pan. Once browned, put meats into crock pot, and return pan to stove.
  2. Chop the onion and pepper as small or large as you’d like it (I like to mince them) and saute in oil or butter (or the grease from the meat). Once the veggies are softened, add to crock pot with the meat.
  3. Pour both cans of the tomato sauce into the crock pot, add chili seasoning to taste, and hot peppers (we add the hot peppers slowly, over time, so we don’t get our chili too hot).
  4. Cook chili on low for at least 3 hours — stir occasionally, and if you prefer a hotter chili, add more hot peppers or even some red pepper flakes over time.
  5. Serve with grated cheese, tortilla chips or corn bread/muffins!

Don’t forget to make a batch of her Simply Sweet Corn Muffins to go with this chili – they complement one another perfectly!

Slow Cooker Recipe: Fagioli Soup with Pasta

It’s time to start this fun series up again! This week’s slow cooker recipe is from Amee at Madame Deals. Perfect for the cooler weather, this slow cooker recipe is sure to warm and fill you up after a busy and hectic day!

Fagioli Soup with Pasta

  • 1 onion-chopped
  • 2-3 ribs celery chopped
  • 4 carrots chopped (I used about 20 baby carrots)
  • 1 tsp minced garlic (I used Tastefully Simple Garlic Garlic -2 TSP)
  • 3-15 oz cans cannellini beans (white kidney beans) drained and rinsed
  • 2- 28 oz can crushed tomatoes
  • 12 cups chicken broth (you can buy it in a can or make your own)
  • Salt and Pepper (to taste)
  • 2 cups small pasta (Used ditalini but you could use shells or elbow)

Directions

  1. Combine all ingredients except pasta in crock-pot and stir to combine.
  2. Cook on low for 8-9 hours.
  3. 20 minutes before serving stir in pasta. Once pasta is cooked the soup is ready to serve.

Top with Parmesan cheese for an extra kick and serve with Beer Bread. Yum!

It’s time to start this fun series up again! This week’s slow cooker recipe is from Tabitha at Saving Toward A Better Life. You can add a little extra spice like Paprika Pepper to kick up the flavor or enjoy as is for a great homemade meal!

Crock-Pot Chicken Enchiladas

  • Chicken Breasts or Tenderloins
  • Can or Rotel Tomatoes
  • Can of Old El Paso Enchilada Sauce
  • Flour Tortillas (or wheat)
  • Shredded Cheese (I use Mexican Blend)
  • Sour Cream
  • Green Onions

Directions

  1. Put Chicken, Rotel, and Enchilada Sauce in crock-pot. Cook on Low 6 hours or High 3-4 hours.
  2. Shred chicken in crock-pot.
  3. Using a slotted spoon, scoop chicken (draining off as much sauce as possible) in to tortillas and roll up.
  4. Pour sauce over enchiladas and top with sour cream, cheese and green onions.

Homemade Laundry Detergent Recipe

laundryHave you ever wondered how to make homemade laundry detergent? Below you will find a homemade laundry detergent recipe shared by a friend of mine. Let me know if you try the recipe or have a homemade laundry detergent recipe of your own!

Homemade Laundry Detergent Recipe

Ingredients:

  • 1 bar of Fels-Naptha Soap
  • 4 cups of hot water
  • 1/2 cup of Borax
  • 1 cup of Arm & Hammer Super Washing Soda (It has to be the Super Washing Soda, baking soda or just Arm & Hammer will NOT work!)
  • 5 Gallon Bucket
  • Empty laundry containers or any kind of pour container

Directions:

  1. Grate your bar of soap into a sauce pan with the 4 cups of hot water.
  2. Stir continually on low-medium heat until all the little flakes of soap melt.
  3. Fill your 5 Gallon bucket halfway full of hot water and pour in the borax, the arm & hammer, and the melted soap mixture and stir until all the ingredients are completely melted. Then fill the remainder of the bucket full with hot water.
  4. Stir the mixture once more, just to ensure everything is mixed well. Then you need to cover the bucket (if you have the lid to the bucket, let it have a little bit of breathing room, because it will expand since it’s full of hot water) and let it sit overnight to gel, it will gel HARD. Then take your dispenser (old tide container for me) and fill half with your laundry soap (I have to use a funnel) and half full of water and shake well each time you use. Will be very liquid-y but works great!

This recipe makes 10 gallons of homemade laundry detergent so if you want to make less simply reduce the ingredients by half, etc.
