It’s time to start up this fun winter series again! This week’s slow cooker recipe is Beef Roast with Veggies from Dana at The Coupon Challenge and is a staple recipe in many homes. Since Dana’s husband and children love beef pot roast, this is a family favorite!

Ingredients

  • 3-4lb Beef Roast
  • 1/2 cup water (you could also use about 1/2 can or so beef stock)
  • 3-6 potatoes depending on size, chopped in large pieces
  • 1 medium onion, chopped (size depending on preference)
  • 1 bag baby carrots
  • 3 stalks celery, chopped
  • 1 container fresh mushrooms, halved
  • 5-6 cloves of whole garlic, peeled
  • Handful of frozen pepper slices (if desired and have on hand)
  • Salt and Pepper
  • Thyme (if desired)

Directions

  1. Place thawed roast in skillet and generously salt and pepper. Brown on all sizes.
  2. Wash and chop all vegetables.*
  3. Place potatoes in bottom of crockpot then place roast on top of the potatoes.
  4. Cut slits in the roast and insert whole garlic cloves.
  5. Add remaining vegetables to crockpot around roast and sprinkle a little thyme if desired.
  6. Pour water (or stock) over roast and cover.
  7. Cook on low 6-8 hours or high 4 hours.

*If you cut potatoes or carrots too small, they will turn to mush.

Don’t lift the lid of the crockpot during cooking or you will add about 30 minutes to your cooking time!

Hooray for crock pot recipes! The photo looks too delicious. I'm definitely saving this recipe to my bookmarks although I'll probably leave out the mushrooms! :P

Crock Pot recipes are my favorite. Roast and vegetables are such comfort food. I just love it. I like your recipe better than mine because you have more herbs and spices. Thanks for sharing.

I thought I was the only person that stuffed beef with garlic. It gives it such a good flavor,and I'm not typically fond of garlic.

Roast in the slow cooker is a favorite. I add Better than Beef brand beef base. Very tasty!

This recipe is very similar to my own,  The only difference is that I use a can of french onion soup and add an extra can of water.  My husand simply loves a good roast.  Thanks for the recipe, I'll have to try your version to see if he likes it better.

Looks like a delicious pot roast. Crock pots are great for alot of recipes . They come in so handy for us cooks. Thanks for your pot roast recipe.

I absolutely love my slow cooker.  I use it at least once a week.  I never use water in any dish I cook - I use either chicken or beef broth in its place.  This recipe sounds yummy!
