It’s time to start this fun series up again! This week’s slow cooker recipe is from Tabitha at Saving Toward A Better Life. You can add a little extra spice like Paprika Pepper to kick up the flavor or enjoy as is for a great homemade meal!

Crock-Pot Chicken Enchiladas

Slow-Cooker-Recipe-Crock-Pot-Chicken-EnchiladasIngredients

  • Chicken Breasts or Tenderloins
  • Can or Rotel Tomatoes
  • Can of Old El Paso Enchilada Sauce
  • Flour Tortillas (or wheat)
  • Shredded Cheese (I use Mexican Blend)
  • Sour Cream
  • Green Onions

Directions

  1. Put Chicken, Rotel, and Enchilada Sauce in crock-pot. Cook on Low 6 hours or High 3-4 hours.
  2. Shred chicken in crock-pot.
  3. Using a slotted spoon, scoop chicken (draining off as much sauce as possible) in to tortillas and roll up.
  4. Pour sauce over enchiladas and top with sour cream, cheese and green onions.

I just made a whole chicken and have lots of leftovers to use.  It doesn't say how much of each ingredient to use so I guess I'll just wing it

 @tstasko I used a pound of chicken in mine but you can use more or less if you'd like. You'll just have extra (or less) sauce. :)

This looks like a great recipe. I never knoew you could make this in a crock pot

before. We just got a new one for Christmas so we will have to try this out soon.

 @Mama-Jen  @NenaSinclair I made these again yesterday because my kids love them so much, but instead of chicken, I used leftover turkey and they were absolutely yummy! My kids can't get enough! It's already become a very well used recipe in my household!

 @NenaSinclair Wow that is wonderful! I will have to give them a try with turkey too. Sounds like a great idea! I think turkey soaks in flavors so much better than chicken so I can imagine this dish tastes great with turkey!

Jenny do you think canned chicken would be an okay substitute?  I have some in the pantry I need to use up. . .

 @jlcaldwe You know, you could try it! You would probably need 2 of the bigger cans I'm guessing. And it definitely wouldn't need to cook as long.. maybe 3 hours on low.

Ohman, this looks amazing. I think I may try it over my kids favorites (fried corn tortillas left open). I bet they will love it.
